WW Twice-Baked Garlic Potatoes
Ingredients:
4 large baking potatoes
1 garlic bulb (unless you really really like garlic, I'd probably use half a bulb next time)
1/2 c. low-sodium chicken broth
1/2 c. nonfat sour cream
1/2 tsp freshly ground pepper
1/4 c. grated parmesan cheese
Paprika
Directions:
- Preheat oven to 425F
- Pierce potatoes several times with a fork; place on a baking sheet. Wrap the garlic in foil and place along side the potatoes. Bake until potatoes are tender and the garlic is browned and softened, 50 - 60 minutes. Let cool until comfortable to handle, about 15 minutes.
- Halve the potatoes lenghtwise; scoop the pulp into a large bowl, leaving the skins intact. Cut the garlic bulb in half and squeeze out the pulp and add to the potato. Add the broth, sour cream and pepper; stir and mash to the desired texture. Spoon the stuffing back into the potato skins, sprinkle wiht the cheese and paprika.
- Return the potatoes to the baking sheet and bake until heated through and lightly browned, about 15 minutes.

Update:
The baked potatoes were very very very garlicky, but they were good. I think next time I make it I'll use about half the garlic.

Bad Weekend
Well, I've officially used being sick as an excuse to be a total idiot in terms of food. I ate bad things all weekend long. My offenses include 2 slurpees, 2 small bags of Ariba chips, 1 whole small double pepperoni pizza, KD and way too much ginger ale. I've been so good about making better choices for the last three weeks and then poof, something inside me snapped and I didn't care about points and calories, I just wanted to eat crap. The sad thing is, most of the food made me feel sick and wasn't that good anyway. Oh well, hopefully I won't gain too much at WI on Tuesday.
On a positive note, I'm not abadoning my weightloss attempt and just sent my husband to the store with a list of things to make good healthy recipes from the WW coookbook. The other positive, being sick last week, I hardly ate much early in the week and I'm still within my flexpoints for the week. Go figure. (Of course, I might have missed a few things since some of it is just a blur of eating).
Finally read up on bronchitis and turns out I'll probably have this cough for another 2 weeks. At least, other than the cough, I'm feeling much better. I'm going to try to do my fat burning pilates DVD tonight. I hope I can do it without wheezing and coughing too much.

I love Antibiotics!!
I'm finding it harder to stay on track this week. Craving not just bad foods but my old bad habits too. I just wanted to curl up with a can of pepsi and a bag of chips and eat them until they're gone. And a big bowl of pasta with cream sauce and bacon and ... well you get the idea.
I just have to keep chanting... nothing tastes as good as being healthy and looking good, right?
Hint: If you have a bad cough and a sore throat... don't watch a comedy. Ouch!!

Sicker Monday
Okay enough of my whining!
Think if I live on crackers and OJ today, I may actually be down for my WI tomorrow morning?

Well, I think I actually worked more hours at home than I would have at work, but I made all my deadlines and I'm in pretty good shape for tomorrow. My DD spent almost the whole day on my lap, which made typing a bit challenging. But I'm so relieved that both kids seem to be feeling better, I almost didn't mind being sick myself (almost!!).
I've been trying not to drink any cola, but discovered that carbonated pop actually soothes my tortured throat. Oh well, one pop is still a long way from the three to four a day I was doing before and tomorrow's another day... EEK! I just realized tomorrow is WI. Wish me luck!!

Sick Sunday
A brief introduction...
I'm a working mom. I've been married to DH for 5 1/2 years and have a DS who turned four on Friday and a DD who is 21 months. I'm trying to lose 52 pounds before the summer (when I plan to have breast reduction surgery). I've joined WW and have lost 10 lbs so far.
This last week hasn't been as good as my first two weeks. I've been craving bad foods, work has been crazy and I haven't been doing any exercise.
My DS was supposed to have his birthday party today, but DD has a nasty cold and all she wants to do is hang off me. We had to cancel the party and I feel really bad for DS.
Looks like DD has shared her cold, which means next week will not be fun. Oh well, I will try to stay on track and stay positive.
